This recipe is compliments of Shannon Charpentier, AKA Foxy! (And, is a go-to, favorite recipe of Amy’s!)

Mediterranean
Salmon
Ingredients:
1 onion, diced
4 garlic cloves, minced
1/4 cup, large green olives, sliced
1 cup, pitted Kalamata olives, cut in half
1 can artichokes, drained and chopped
1 large can whole tomatoes, drain and reserve liquid, chop tomatoes into bite size pieces
1 small can tomato sauce
2 Tbsp capers
4 – 6 oz. pieces of salmon filet, skinned

Directions:
Saute the onions in olive oil for 5 minutes. Add garlic and cook 1 minutes. Add tomato sauce, canned tomatoes and liquid, stir. Add olives, artichokes and capers. Simmer on low for 30 minutes.
Place the salmon in a frying pan with high sides, toss the tomato mixture over the top to cover the salmon. Put a lid on the pan and simmer on medium until desired doneness. Approximately 15 minutes. Mixture should be bubbling. Option: Serve with steamed broccoli.
Serves 4.
