Nachos can be anytime of the day – just throw some eggs in there! This recipes is from Emily Larson, of Battle Lake, MN, and is a summer favorite. Sure, you can make this any time of year… but there is something about sitting outside with breakfast nachos that feels better.
Ingredients –
8 eggs, scrambled
1/2 bag tortilla chips
8 slices bacon, cooked crisp and crumbled
4 breakfast sausages, cooked and diced
1/2 bell pepper, chopped
canned jalapenos, to taste
onion, diced, to taste
16 oz. favorite shredded cheese
sour cream and salsa, to taste
Instructions –
Preheat oven to 400 degrees. Lay half of tortilla chips on a parchment lined baking sheet. Layer half of the cooked scrambled eggs, meats and cheese. Repeat layer and add jalapenos and onions and peppers, if desired. Bake for 10 minutes until the cheese has melted. Serve with salsa and sour cream.
