Easy Meatloaf

It seems that it is hard to control weight gain during the winter months. It has to be the fact that “comfort foods” are the culprit. Hot chocolate, grilled cheese sandwiches, macaroni and cheese (not the box type), creamy tomato soup, meat loaf and whatever else is a favorite for you. I even like hot oatmeal with dried cranberries or raisins cooked into it. The meatloaf recipe today can be doubled; bake one and wrap and freeze the other one for later use. I like to have baked potatoes with meatloaf, but another potato that we like is oven baked potatoes. I just scrub them well and cut the potatoes into pieces with the peeling left on, coat with butter or olive oil and season with some salt, pepper, garlic or onion powder and a little sprinkling of rosemary.

Easy Meatloaf

1 1/2 Pounds of lean ground beef

1 Cup milk

1 Egg

3/4 Cup soft bread crumbs

1 Package dry onion soup mix

Mix all ingredients together in a large bowl until blended. Pat into a loaf pan and bake 350 degrees about an hour. Drizzle top with ketchup and bake an additional 15 minutes. Sometimes I make individual meat loaves by dividing the mixture evenly into muffin tins for a shorter baking time. Yield 6-8 servings.
