Eggs in the Microwave!

A few weeks ago, while filling in on It Takes 2, Jack Sunday mentioned he had found a new way to make eggs in the microwave and they were really good. To be honest, I didn’t believe him. I’ve always wondered why people used a microwave when it only take a few minutes on the stovetop?! However, after trying it for myself, I’m hooked!

Not to be dramatic, but this recipe has changed my life! Even my kids (both still under 10 years old!) make this recipe. They enjoy that they can do it themselves and that it’s good. But, the first time I showed them, they were also skeptics.

The easiest way to make an omelet-style egg:

1. Spray your ramakin or bowl with oil.

2. Whisk 1 teaspoon of mayonnaise for every egg. And, whisk until completely combined. (You can add salt and pepper, as well.)

3. Microwave for about 45-60 seconds per egg. (Every microwave is different, so you might want to play with the time a bit – just make sure they aren’t under or over cooked.)

And, that’s it! Enjoy by itself or add cheese, a slice of toast or roll it up in a tortilla.

The mayonnaise does not leave a strong taste. The eggs are savory, fluffy and have an omelet-like consistency.
