Great recipe for a side dish

The world has two types of people – folks who get bags full of zucchini from their friends or neighbors and those that fill the bags. I don’t know if I have ever met someone who grew the EXACT amount of zucchini they need… This is a great recipe for a side dish when having something on the grill or serve with some seasoned sour cream as an appetizer. Note, this version of the recipe is for oven roasting – but I am sure that it could easily be adapted to an air fryer.

Roasted Zucchini Chips

2 medium sized zucchini, cut into 1/2 inch thick rounds

1/2 cup grated parmesan cheese

1 tsp garlic powder

2 tbsp olive oil

3/4 tsp sea salt

1/2 tsp pepper

Preheat oven to 450°F

In a large bowl toss the zucchini with olive oil, salt, pepper and garlic powder.

Arrange on a baking sheet, leaving space between each zucchini chips, and bake for 5 minutes. Remove from the oven and top each with the parmesan cheese.

Place back in the oven and change setting to Broil, allow them to broil for 2 minutes or until the cheese is golden brown.

Remove from the oven and serve while they are still warm.
