Knepfla Soup – Darlene Elsner, from Mrs. Alvina (Mrs. Ludwig) Mayer

INGREDIENTS:
2 quarts water 1 teaspoon salt 1 cup cut up potatoes 2 cups flour 1 egg 1/2 cup milk 2 eggs beaten 1/2 cup cream 3/4 teaspoon baking powder 1 egg 1/2 teaspoon salt 2 tablespoons vinegar

DIRECTIONS:
Bring to a boil: water, 1 teaspoon salt and potatoes. Make soft dough of flour, baking powder, salt, 1 egg and milk. Cut this dough with a knife or scissors into the boiling water. Boil for 10 minutes. Mix 2 beaten eggs, cream, 1 teaspoon salt and vinegar. Bring to a boil and pour into boiling potato and knepfla water. Stir and serve.
