Peach Cobbler

It felt like we had a hint of fall in the air with those 60 degree temperatures. I know that this is just a little cool down and we will be back to some normal August weather and complaining about the heat and humidity. You will not hear any complaints from me as we have way too much winter and cold weather so I look forward to the heat.

This is my favorite time of year with all the fresh vegetables from the garden and the fresh fruits that are so plentiful in the stores. Peaches are in season and the peaches from Youth for Christ are always wonderful. I usually share a crate with someone and we eat our fill of the sliced peaches with cream or ice cream. I have a couple of peach recipes to share with you that I received from Donna in my water aerobics class at the Y. I made this yummy peach cobbler early Sunday morning and it was fast and easy to prepare.

Peach Cobbler

4 Cups peeled and sliced peaches (4-5)

1 Cup flour

1 Cup sugar

1 Teaspoon baking powder

1/2 Teaspoon salt

4 Tablespoons melted butter

1/2 Cup milk

1 Tablespoon cornstarch

1/2 Cup boiling water

Preheat oven to 325 degrees. Place sliced peaches in 9×9 inch pan. In medium bowl mix flour, 3/4 cup sugar, baking powder and salt. Add milk and melted butter; mix well. Pour batter evenly over peaches. In a small bowl blend remaining 1/4 cup sugar with cornstarch and sprinkle mixture over batter; pour boiling water evenly over all. Bake until golden brown and bubbling. About 50 minutes. Serve with whipped cream or ice cream.
