Radish Butter

This is a fun twist for people that enjoy butter…pretty much anyone! The uses for radish butter include: on bread, on a cracker, cooking eggs, on a steak, just a little sliver to eat!

Radish Butter

1lb butter

10 radishes thinly sliced (can be diced or in round form).

2Tbls oil (not olive – I suggest vegetable)

Optional – fresh herbs (dried) like parsley or thyme

Get a pound of good quality butter (I prefer the Kerrygold)

Slice the radishes and then put them on a paper towel, dry thoroughly, let them stand for 15 minutes to dry slightly. You do NOT want additional moisture in the final mix.

Melt the butter and use a fork to mix it. Slowly add the oil, stirring constantly. Add the sliced radishes, and if you choose – herbs, mixing. Take the soft mixture and form it into a circle or put it into a shallow bowl. Let it sit in your refrigerator for a day. Eat it on bread, crackers, etc by the slice OR add it to the top of a steak.

This Radish Butter will keep for roughly 10 days in the refrigerator. Perfect for an addition to a charcuterie board as well! The crunch and freshness of the radish really makes this butter a favorite around our house. Enjoy!
