Roasted Cabbage with Bacon

The flower beds around Fargo & Moorhead are spectacular. Since I am a gardener, I enjoy seeing all the beautiful plantings as I cross the Veteran’s Memorial Bridge into Fargo. Some of the stores in Fargo have planters by the entrance doors; Ameripride on main avenue has a couple of especially beautiful pots. Downtown Fargo has huge petunia baskets on Broadway. There are some very showy hanging baskets on Eleventh Street in Moorhead by MSUM and Concordia always has some very nice plantings along Eighth Street. There are some very large hanging begonia baskets by the east entrance to Eventide on Seventh Street South. The past couple of years Kovash Marine on first avenue north in Moorhead has several planters lined up along the sidewalk near the street and I have wanted to stop in and thank them for their efforts, thank you! I toured the trial gardens and day lily plantings at NDSU a month or so ago and they were breathtaking. I noticed that uptown Moorhead has some nice memorial plantings that I assume are done by individuals. I cannot forget Dilworth on highway 10 where a home owner has planted the boulevard with red, white and blue petunias.

The cabbage has been so nice and firm this year to make slaw, cabbage rolls and steamed cabbage. I have made sauerkraut in the past, but those days are done and I am so over it! The roasted cabbage recipe is something that I have been wanting to try.

Roasted Cabbage with Bacon

Cut cabbage into wedges or thick slices. Place cabbage on foil in a shallow pan and brush with a mixture of olive oil, lemon juice and bacon bits. Season with salt and pepper. Bake 425 degrees for 25-30 minutes.
