Fruit Cocktail Cake

Since I retired many people have asked what I do to keep busy; I wonder how I ever had time to go to regular employment! It seems there are so many groups needing volunteers for various activities. Those volunteer opportunities are at your churches, schools, nursing homes & retirement homes and of course helping to care for the grandchildren when needed; in my case the great grandchildren! I know why God gives babies to young people! On Wednesday this week I am helping to host the membership tea for the auxiliary at a local nursing home. This weeks recipe is for the dessert that we will be serving. The recipe has been around as far back as I can remember, but it is good and easy to make. I find that it can be baked a day or two before it is served and it gets better after sitting for a couple of days.

Fruit Cocktail Cake

2 1/4 Cups flour

1 Teaspoon salt

2 Teaspoons baking soda

2 Eggs

1 Cup brown sugar

1/4 Cup butter

1 16 Ounce fruit cocktail, not drained

Put all ingredients, except fruit cocktail into a large bowl and mix on low speed until blended. Add fruit cocktail and mix on medium for 2 minutes. Pour into a greased and floured 9 x13 pan. Bake at 350 degrees for 30-40 minutes. Sprinkle 1/2 cup chopped nuts over top before baking (optional). Serve with whipped cream or Cool Whip.
