Overnight Chicken Casserole

\Overnight Chicken Casserole is something that would be good to serve to company and can be prepared ahead of time. When I was working, I always liked anything that I could prepare ahead and just put in the oven when I got home. You can serve this with a nice green salad and a light dessert.

Overnight Chicken Casserole

2 Cups cooked cut up chicken

2 Cups raw macaroni

2 Cans cream of chicken soup

1 Soup can of milk

2 Cups chicken broth

1/2 Cup diced onion

1 Small can pimento

1 5 oz can water chestnuts

1/2 Cup slivered almonds

1/2 Cup Velveeta cheese (grated)

Garnish:

Crushed potato chips or canned french fried onion rings

Mix all ingredients together (except garnish) in order given; spread in a greased 9 X 13 baking dish. Cover with foil and refrigerate over night. When ready to bake, remove foil and bake uncovered at 350 degrees for about 50 minutes. Remove from oven and sprinkle with crushed potato chips or french fried onion rings. Return to oven for an additional 10 minutes or until dish is done. I like to give a few minutes of stand time to set up before cutting in squares and serving. Leftovers can be refrigerated and reheated in the microwave.
