Pumpkin Dessert

Halloween is this week and I hope that everyone watches out for the kids when they are out getting their treats. They get so excited and may have trouble seeing with their masks or be tripping over their costumes. Being Halloween is on a Friday, there will probably be lots of parties for the kids and they may be out later than usual. I heard some statistics on the radio that there is quite a high percentage of young adults that wear costumes for Halloween and go to parties or bars. I have been in awe of people who dream up the fabulous and funny costumes that are worn. I have no imagination when it comes to dressing up but the kids that come to the door always like to see me in a costume. I don’t know what that will be, I think I will just be grandma!

This pumpkin dessert recipe was given to me by one of our church members; it is easy to make and very good.

Pumpkin Dessert

1 12 oz. Can of evaporated milk

1 1/2 Cups sugar

1 20 oz. Can of pumpkin

4 Eggs, beaten

2 Teaspoons cinnamon

1 Teaspoon ginger

1 Yellow cake mix

1 Cup melted butter

Chopped nuts

Mix evaporated milk, sugar, eggs, pumpkin and spices together and pour into greased 9 x 13 pan.

Sprinkle the dry cake mix evenly over the pumpkin mixture; pour melted butter over all and sprinkle with chopped nuts. Bake 325 degrees for 1- 1 1/2 hours. Serve with whipped topping. Refrigerate leftovers.
